Yummy cookies...Virtually guiltless too!!!

So I signed up to make cookies for a church event today... I didn't want to make normal cookies and I wanted them to be mostly healthy. I looked online to find a recipe and then made a few modifications. Here's what I came up with:

Oatmeal White Chocolate Chip Blueberry Cookies
1 c. natural applesauce
1/3 c. light brown sugar
1/4 t. ground cloves
1/4 t. ground nutmeg
1 t. ground cinnamon
1 t. vanilla
1/4 t. baking soda
1 large egg
1 1/2 c. quick oats
1 1/4 c. all purpose flour
1 c. dried blueberries
1 c. white chocolate chips

Combine apple sauce, brown sugar, cloves, nutmeg, cinnamon, vanilla, baking soda, and egg. Add oats and flour. Mix in berries and chips by hand. Drop dough onto cookie sheet in 1 T. portions. (It won't spread in the oven so you may want to form them a little.) Bake at 375 F for 8-10 minutes, or until slightly browned.

I used the software at school to figure out what the breakdown was on this recipe and turns out they aren't as healthy as they look... :(

If you make 24 cookies with this recipe each cookie will have approximately 120 calories, 30 of those coming from fat. I was really shocked because looking at the recipe they look like they are low fat, but it all comes from those pesky white chocolate chips. If you further modify the recipe and cut the chips and berries in half you get a much better (healthywise) cookie that is only 90 calories with only 15 of those from fat.

  1. I forget to mention that the flour was unbleached... maybe next time I'll try whole wheat...
